Each shelf can hold 2 pans and temperature can be independently managed for each. A tray seal on each zone provides radiant heat to soft, juicy foods while sealing them to prevent the loss of moisture. For crispy or fried foods, the tray seal can be removed, allowing air to circulate around the food to prevent moisture build up. The heated airflow gently cascades over food products to maintain optimal holding environment for even the most delicate foods.
