This unit features an open well with a dry design that doesn't require the use of water. A stainless steel shroud covers the exposed moisture-resistant element used to heat the contents of each well. The wells feature a drawn design and are twice insulated to keep the heat contained within the well for greater heating efficiency, and the two warming zones per well can operate independently or be synced. This keeps your food fresher and maintains its highest quality for your customers! It can hold standard full size or fractional steam table pans up to 4" deep, and has the same cutout dimensions as other Vollrath modular hot-drop-ins. To quickly turn this unit on or off, a master power button comes standard for an easy, single-push operation. This model comes with an individual power and heat control panel for each well for precision-perfect temperature control, and has a temperature range of 140 degrees- 190 degrees F (60 degrees- 88 degrees C) and three power levels (low, medium, high). Crafted from extremely durable, commercial grade 300 series stainless steel, this unit is more durable and 2.9 times more energy efficient than other steam warming systems. Nothing is safer or faster, either. Due to the induction technology, this unit directly transfers the heat straight to the pan and its contents, greatly reducing any start-up times. No heat is produced unless an induction ready pan is on the unit and only the pan and food get hot, never the drop-in surface. For efficient installation, there is no hardwiring that needs to be done and comes with standard mounting clips for use on counters up to 3" (7.6 cm) thick, so it is easy and clean to install.
